Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Add the chopped onion and minced garlic, cooking until softened. Drain any excess fat.
- Stir in the diced tomatoes (with juice), cream of mushroom soup, cooked rice, frozen mixed vegetables, Italian seasoning, salt, and pepper. Mix everything well until combined.
Assembly and Baking
- Pour the beef mixture into a greased 9x13 inch casserole dish and spread it evenly.
- Sprinkle shredded cheddar cheese over the top, then add the crushed crackers.
- Bake in the preheated oven for 25-30 minutes or until heated through and bubbly.

- Let cool for a few minutes before serving.
Notes
Use lean ground beef to reduce fat; consider adding bell peppers or spinach for extra nutrition. Leftovers can be reheated in the oven or microwave. Cover with foil in the oven to prevent drying out.
