Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine softened unsalted butter and apple butter, mixing until smooth and creamy.
- Add brown sugar and beat until well blended.
- Add egg and vanilla extract, mixing thoroughly.
- In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg (if using), and salt.
- Gradually add dry ingredients to wet mixture, stirring gently until just combined.
- If using, fold in chopped walnuts or pecans.
- Drop rounded tablespoons of dough onto a lined baking sheet, spacing 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
