Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish or an 8x8-inch square pan.
- In a large bowl, whisk together the milk, applesauce, maple syrup (or honey), vanilla extract, and egg.
- Stir in the rolled oats, cinnamon, and salt until well combined.
- Gently fold the chopped apples into the oatmeal mixture.
- Pour the oatmeal mixture into the prepared baking dish and spread it out evenly.
Baking
- Bake in the preheated oven for 35-40 minutes or until the top is golden and the oatmeal is set.
- If adding walnuts or pecans, sprinkle them on top of the oatmeal in the last 10 minutes of baking.
- Let it cool for a few minutes before serving.
Notes
You can drizzle a little extra maple syrup on top if you like it sweeter. For a lighter version, substitute half of the oats with grated zucchini or carrots.
