Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped fresh salmon, breadcrumbs, grated Parmesan cheese, chopped green onions, minced garlic, egg, Dijon mustard, dried dill, and a sprinkle of salt and pepper.
- Mix the ingredients until just combined, being careful not to overwork the mixture.
- Form small meatballs about 1 inch in diameter and place them on the prepared baking sheet.
- Lightly spray the meatballs with olive oil.
Baking
- Bake the meatballs for 15-20 minutes until cooked through and the tops are golden brown.
Sauce Preparation
- While the meatballs bake, prepare the Creamy Avocado Sauce by combining avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper in a blender.
- Blend until smooth and creamy.
Serving
- Serve the baked meatballs drizzled with the avocado sauce, garnished with fresh cilantro if desired.
Notes
Ensure the salmon is fresh and don’t skip the Dijon mustard and dill for enhanced flavor. Let the meatballs rest for a few minutes after baking to retain moisture.
