Method
 

Preparation
  1. Heat a skillet or griddle over medium heat.
  2. Butter one side of each slice of bread.
  3. Spread mayonnaise on the unbuttered side of one slice, and Dijon mustard on the other slice if using.
  4. Place one slice of bread, buttered side down, onto the heated skillet.
  5. Add a slice of cheddar cheese, followed by a layer of roast beef, and top with another slice of cheddar cheese.
  6. Place the second slice of bread on top, buttered side facing outward.
Cooking
  1. Grill the sandwich for 3-4 minutes on each side until golden brown and crispy.
  2. Press down gently with a spatula for even grilling.
  3. Add thinly sliced onions while grilling if desired.
Serving
  1. Remove the sandwich from the skillet, let it rest for a minute, then cut in half and serve immediately.
