Ingredients
  

For the crust
  • 1 cup graham cracker crumbs Aromatic and slightly sweet.

For the filling
  • 1 1/2 cups cottage cheese Creamy base for the cheesecake.
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries) Adds freshness and color.
  • 2 tbsp honey Natural sweetness for the filling.
  • 1/4 cup Greek yogurt Adds silky consistency and tanginess.
  • 1 tsp vanilla extract Classic flavor enhancer.
  • 1 tbsp lemon juice Brightens up the filling flavor.
  • 2 large eggs Crucial for creamy texture and stabilization.
For the topping
  • 1 tbsp honey To toss with fresh berries.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 1 tablespoon of sugar. Press firmly into the bottom of a springform pan.
  3. In a blender, add cottage cheese, honey, Greek yogurt, eggs, vanilla extract, lemon juice, and the remaining sugar. Blend until smooth and creamy.
Baking
  1. Pour the filling over the crust and bake for 45-50 minutes, until the center is set and lightly golden.
  2. Once baked, cool the cheesecake at room temperature before refrigerating for 2-3 hours.
  3. Gently toss fresh berries with the remaining honey for topping.
  4. Spoon the berry mixture over the chilled cheesecake and serve.

Notes

Ensure all ingredients are at room temperature before mixing. For a unique flavor, infuse spices like cinnamon or nutmeg into the crust. Cool the cheesecake completely before refrigerating to avoid a soggy crust.
