Preparation
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners or greased cups.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar until well combined.
- In another bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry mixture and stir gently until just combined.
- Gently fold in the mixed berries without breaking them.
- In a small bowl, mix the softened cream cheese, powdered sugar, and additional vanilla extract until smooth.
- Spoon a small amount of batter into each muffin cup, add a dollop of cream cheese mixture, and top with more batter.
- Use a toothpick to swirl the cream cheese filling into the batter.
Baking
- Bake for 18-22 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
Notes
For extra flavor, add lemon zest to the batter. You can also experiment with different fillings like chocolate chips or nuts. Ensure ingredients, especially cream cheese, are at room temperature for best results.
