Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
- In a separate large bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Blend in the vanilla extract and mashed bananas.
- Gradually add the dry ingredients into the banana mixture, alternating with the sour cream. Stir gently until just combined; do not overmix.
- Gently fold in the blueberries.
Baking
- Pour the batter into the prepared loaf pan and smooth the top evenly.
- Bake for 55-60 minutes, or until a toothpick inserted comes out clean.
Cooling
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use overripe bananas for maximum sweetness. You can add walnuts or pecans for a crunchy texture. Allow to cool completely before slicing to prevent gumminess. For a less sweet bread, reduce sugar by 1/4 cup.
