  • 1 1/2 cups fresh or frozen blueberries Bursting with flavor in every bite.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
  3. In a separate large bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Blend in the vanilla extract and mashed bananas.
  4. Gradually add the dry ingredients into the banana mixture, alternating with the sour cream. Stir gently until just combined; do not overmix.
  5. Gently fold in the blueberries.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top evenly.
  2. Bake for 55-60 minutes, or until a toothpick inserted comes out clean.
Cooling
  1. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use overripe bananas for maximum sweetness. You can add walnuts or pecans for a crunchy texture. Allow to cool completely before slicing to prevent gumminess. For a less sweet bread, reduce sugar by 1/4 cup.
