Method
 

Preparation of Dough
  1. In a medium saucepan, bring the water, butter, and salt to a boil over medium heat.
  2. Once boiling, remove from heat and stir in the flour until fully combined.
  3. Return the saucepan to heat, cooking for an additional 1-2 minutes while stirring until smooth.
Cool and Combine
  1. Once the dough has cooled for a few minutes, add the eggs one at a time, stirring until completely incorporated.
  2. Stir in the vanilla extract.
Heat Oil
  1. In a deep fryer or large pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).
Make Cheesecake Filling
  1. Beat the softened cream cheese, granulated sugar, and vanilla extract in a medium bowl until smooth and fluffy.
Pipe and Fry Churros
  1. Use a piping bag or zip-top bag to pipe churro dough into circular rings into the hot oil.
  2. Fry for 2-3 minutes per side or until golden brown and crispy.
  3. Remove from oil and drain on paper towels.
Coat and Assemble
  1. Mix sugar and cinnamon for the coating and roll warm churro rings in the mixture.
  2. Pipe cheesecake filling into each ring and drizzle with warm caramel sauce before serving.

Consider using a star-shaped piping tip for intricate shapes. Mix in citrus zest for a flavor twist.
