Method
 

Preparation
  1. Rinse the fresh strawberries under cool water, hull them gently, and slice in half lengthwise.
  2. Scoop out a small amount of the center of each strawberry to create space for filling.
Making the Filling
  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add powdered sugar and mix until well combined.
  3. Add vanilla extract and lemon juice (if using) and mix again.
Assembly
  1. Fill each strawberry half with the cheesecake mixture using a piping bag or spoon.
  2. Top with graham cracker crumbs.
  3. Garnish with a mint leaf if desired.
Serving
  1. Chill for about 30 minutes before serving for the best flavor.
