Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Core the apples, leaving about half an inch at the bottom.
  3. Place the apples upright in a baking dish.
  4. In a mixing bowl, combine cream cheese, granulated sugar, vanilla extract, sour cream, lemon juice, and cinnamon. Blend until smooth and creamy.
  5. Spoon the cheesecake mixture into each apple, packing it in gently.
  6. In a small bowl, mix crushed graham crackers with melted butter and sprinkle it on top of each apple.
Baking
  1. Cover the baking dish with foil and bake for 25-30 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until the apples are tender and the topping is golden brown.
  3. Drizzle with caramel sauce before serving.
