Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine cream cheese, powdered sugar, and 1/2 tsp vanilla extract. Beat until smooth.
  3. In a medium bowl, whisk together flour, baking soda, and salt.
  4. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Fold in the chocolate chips gently.
  8. Scoop about 1 tablespoon of cookie dough, flatten it slightly, put cheesecake filling in the center, top with another tablespoon of cookie dough, and seal it.
Baking
  1. Space the stuffed cookie dough balls on the baking sheet and bake for 10-12 minutes until edges are golden. Centers should still feel soft.
