Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, combine cream cheese, powdered sugar, and 1/2 tsp vanilla extract. Beat until smooth.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chocolate chips gently.
- Scoop about 1 tablespoon of cookie dough, flatten it slightly, put cheesecake filling in the center, top with another tablespoon of cookie dough, and seal it.
Baking
- Space the stuffed cookie dough balls on the baking sheet and bake for 10-12 minutes until edges are golden. Centers should still feel soft.
- Let cool for 5 minutes before transferring to a wire rack and enjoying.
Notes
Ensure all ingredients are at room temperature for the best results. Chill dough if sticky. Optional spices can be added for variations.
