Prepare the Tostadas
- Heat vegetable oil in a skillet over medium-high heat. Fry the corn tortillas, one at a time, for about 1-2 minutes on each side until they are golden and crispy. Once done, place them on a paper towel to absorb excess oil.
Cook the Beef
- In a large skillet, heat the olive oil over medium heat. Add the finely diced onion and sauté for about 3-4 minutes until softened. Introduce the minced garlic and cook for another minute. Next, add the ground beef, cooking until it’s browned and fully cooked. Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper, stirring well and then adding the tomato sauce. Simmer for about 5-7 minutes.
Make the Cheese Sauce
- Melt butter in a saucepan over medium heat. Once melted, add the flour, whisking until it forms a smooth paste. Gradually pour in the milk while whisking until the mixture thickens. Stir in the cheddar cheese and paprika until melted and smooth.
Assemble the Tostadas
- Take each tortilla and place it on a plate. Add a spoonful of the beef mixture, drizzle with cheese sauce, and top with lettuce, diced tomato, and cilantro. Serve with lime wedges.
