- Heat olive oil in a large skillet over medium-high heat. Add chopped onion and minced garlic, and sauté for 2-3 minutes until fragrant.
- Introduce the ground beef into the skillet. Break it up with a spatula and cook until browned, about 7-8 minutes.
- Sprinkle in chili powder, cumin, paprika, salt, and pepper. Stir together and let cook for an additional 2 minutes.
- Warm the tortillas in a dry skillet over low heat or microwave for 10-15 seconds until pliable.
- Take a scoop of the beef mixture and place it in the center of each tortilla. Top with shredded cheddar cheese.
- Fold in the sides of the tortilla and roll tightly to form wraps.
- Optional: Heat a skillet over medium heat and cook each wrap seam-side down for about 2-3 minutes per side until golden brown.
- Serve hot with sour cream, salsa, and a sprinkle of cilantro.
Notes
For extra flavor, consider marinating your beef overnight. You can add black beans or corn to the mixture for texture. Use a non-stick skillet to reduce oil needed.
