Preparation
  1. Heat olive oil in a large skillet over medium-high heat. Add chopped onion and minced garlic, and sauté for 2-3 minutes until fragrant.
  2. Introduce the ground beef into the skillet. Break it up with a spatula and cook until browned, about 7-8 minutes.
  3. Sprinkle in chili powder, cumin, paprika, salt, and pepper. Stir together and let cook for an additional 2 minutes.
  4. Warm the tortillas in a dry skillet over low heat or microwave for 10-15 seconds until pliable.
  5. Take a scoop of the beef mixture and place it in the center of each tortilla. Top with shredded cheddar cheese.
  6. Fold in the sides of the tortilla and roll tightly to form wraps.
  7. Optional: Heat a skillet over medium heat and cook each wrap seam-side down for about 2-3 minutes per side until golden brown.
  8. Serve hot with sour cream, salsa, and a sprinkle of cilantro.

Notes

For extra flavor, consider marinating your beef overnight. You can add black beans or corn to the mixture for texture. Use a non-stick skillet to reduce oil needed.
