Ingredients

Main Ingredients
  • 1 lb ground sausage Juicy and savory, this is the heart of your dip.
  • 1 8 oz block cream cheese, softened This adds an irresistibly smooth and creamy texture.
  • 1 cup shredded cheddar cheese Its sharpness enhances the overall flavor and gooeyness.
  • 1 cup shredded mozzarella cheese This cheese melts beautifully, offering a stretchy consistency.
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, drained These bring a zesty balance with a slight kick.
Spices
  • 1/2 tsp garlic powder Aromatic and bold, it adds depth to the dish.
  • 1/2 tsp onion powder This contributes a sweet, savory note.
  • 1/2 tsp paprika For a mild smokiness that rounds out the flavors.
  • 1/4 tsp black pepper A pinch of heat that enhances the overall taste.
Garnish (Optional)
  • 1 tbsp chopped fresh parsley For a pop of color and freshness.

Method

Cooking the Sausage
  1. In a large skillet over medium heat, add the ground sausage. As it cooks, break it up with a spatula until it is browned and fully cooked, which should take about 5-7 minutes. Drain any excess grease.
Adding Cream Cheese
  1. Reduce the heat slightly, and add the softened cream cheese directly to the skillet. Stir until melted and smoothly incorporated with the sausage.
Incorporating the Cheeses
  1. Add in the shredded cheddar and mozzarella cheeses. Stir to combine, allowing the cheese to melt into the warm mixture.
Mixing in Tomatoes and Spices
  1. Fold in the drained Rotel diced tomatoes with green chilies, garlic powder, onion powder, paprika, and black pepper. Stir until the cheeses melt completely and the dip becomes smooth and creamy.
Finishing and Serving
  1. Remove the skillet from the heat. Optionally garnish with chopped fresh parsley. Serve immediately with tortilla chips, crackers, or fresh veggies.

Notes

For variations, experiment with different cheeses like pepper jack for heat or Gouda for smokiness. You can also use breakfast sausage, Italian sausage, or chicken sausage. Make ahead and refrigerate, reheating before serving.
