Ingredients
  

For the Tart Shells
  • 1.5 cups all-purpose flour
  • 0.5 cups unsalted butter, chilled and cubed
  • 3 tablespoons granulated sugar
  • 2-3 tablespoons cold water Add gradually until the dough comes together
For the Cherry Filling
  • 1.5 cups fresh or frozen cherries, pitted Thaw frozen cherries and drain excess moisture
  • 0.5 cups granulated sugar Adjust based on cherry sweetness
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 0.25 cups water
For Topping
  • Whipped cream for topping
  • Fresh cherries for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Grease a tart pan or mini tart pans.
Tart Shell Preparation
  1. In a food processor, combine the all-purpose flour, chilled butter, and sugar, pulsing until the mixture resembles coarse crumbs.
  2. Gradually add cold water, pulsing until the dough comes together. Turn out onto a floured surface and knead into a ball.
  3. Roll out the dough to fit your prepared tart pan(s). Press the dough into the pan and prick the bottom with a fork.
  4. Bake for 15-20 minutes or until golden brown. Allow to cool completely.
Cherry Filling Preparation
  1. In a saucepan over medium heat, combine cherries, sugar, cornstarch, lemon juice, and water. Stir occasionally until thickened, about 5-7 minutes.
  2. Remove from heat and let cool slightly. Spoon filling into cooled tart shells.
Final Assembly
  1. Top each tart with whipped cream and additional cherries for garnish. Serve cold or at room temperature.

Notes

Add a pinch of cinnamon to the filling for extra flavor. Consider using pre-made tart shells for convenience.
