Preparation
- Preheat your oven to 375°F (190°C). Grease a tart pan or mini tart pans.
Tart Shell Preparation
- In a food processor, combine the all-purpose flour, chilled butter, and sugar, pulsing until the mixture resembles coarse crumbs.
- Gradually add cold water, pulsing until the dough comes together. Turn out onto a floured surface and knead into a ball.
- Roll out the dough to fit your prepared tart pan(s). Press the dough into the pan and prick the bottom with a fork.
- Bake for 15-20 minutes or until golden brown. Allow to cool completely.
Cherry Filling Preparation
- In a saucepan over medium heat, combine cherries, sugar, cornstarch, lemon juice, and water. Stir occasionally until thickened, about 5-7 minutes.
- Remove from heat and let cool slightly. Spoon filling into cooled tart shells.
Final Assembly
- Top each tart with whipped cream and additional cherries for garnish. Serve cold or at room temperature.
Notes
Add a pinch of cinnamon to the filling for extra flavor. Consider using pre-made tart shells for convenience.
