Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking for your bars.
  2. Grease or line a 9x13-inch baking dish with parchment paper for easy removal and cleanup.
  3. In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt.
  4. In a large mixing bowl, cream the softened butter and sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
  5. Incorporate the eggs one at a time, mixing well after each addition, then add the vanilla extract and mix until combined.
  6. Gradually add the dry mixture to the wet ingredients, mixing just until well incorporated.
  7. Transfer the cookie dough into the prepared baking dish and spread it evenly.
  8. In a small bowl, mix the 1/4 cup sugar with 2 teaspoons of ground cinnamon, then sprinkle this mixture over the top of the dough.
