  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese divided
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1/2 teaspoon red pepper flakes optional
  • 1 cup cooked rice or pasta optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  3. Stir in the shredded chicken, chopped spinach, cooked rice or pasta if desired, and half of the mozzarella cheese.
  4. Pour the mixture into a greased 9x13 inch baking dish.
  5. Top with the remaining mozzarella cheese and the grated Parmesan cheese.
Baking
  1. Bake for 25-30 minutes, or until the casserole is hot and bubbly and the cheese is melted and golden.
  2. Let it cool for a few minutes before serving.

Notes

For an extra creamy texture, add more cream cheese or a splash of milk. To spice it up, consider adding diced jalapeños or using pepper jack cheese instead of mozzarella. Serve with garlic bread or a fresh salad.
