Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish.
  3. In a large bowl, combine the shredded chicken, chopped spinach, softened cream cheese, sour cream, half of both the mozzarella and Parmesan cheeses, garlic powder, onion powder, salt, and pepper.
  4. If using, gently fold in the cooked pasta into the mixture.
  5. Scoop the combined ingredients into the prepared baking dish, spreading evenly.
  6. Sprinkle the remaining mozzarella and Parmesan cheeses over the top, then cover with breadcrumbs and drizzle with olive oil.
  7. Bake for 25-30 minutes until bubbly and golden brown.
  8. Let cool for a few minutes before slicing to serve.

Notes

For best results, allow the casserole to rest after baking. Experiment with different cheeses or spices for variety. Can substitute Greek yogurt for cream cheese for a lighter version.
