Method
 

Preparation
  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine 1 1/2 cups of crushed graham crackers, 1/2 cup of melted unsalted butter, and 2 tablespoons of sugar. Press the mixture firmly into the bottom of the prepared pan.
Mixing Filling
  1. In a large mixing bowl, beat 16 oz of softened cream cheese until smooth.
  2. Gradually add 1 cup of granulated sugar and 1 teaspoon of vanilla extract, mixing until well combined.
  3. Introduce 3 large eggs one at a time, mixing on low speed to avoid overmixing.
  4. Stir in 1 cup of sour cream and 1/2 cup of caramel sauce until glossy.
  5. Fold in 1 cup of chopped Twix bars.
Baking
  1. Pour the cheesecake filling over the crust and smooth it out with a spatula.
  2. Bake in the preheated oven for 55-60 minutes, until the edges are set but the center is slightly jiggly.
  3. Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour.
Chilling
  1. Transfer to room temperature and refrigerate for at least 4 hours, or ideally, overnight.
Finishing Touches
  1. Melt 1/2 cup of chocolate chips gently and drizzle over the chilled cheesecake.
  2. Top with extra caramel sauce and chopped Twix bars before serving.
