Method
 

Preparation
  1. In a large mixing bowl, cream together softened butter and granulated sugar until fluffy.
  2. Add the egg and vanilla extract, beating until smooth.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until a soft dough forms.
  4. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least one hour.
Baking
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Roll out one disc of dough to about 1/4 inch thick on a floured surface.
  3. Use cookie cutters to cut out shapes and transfer to the baking sheets, spacing them apart.
  4. If desired, sprinkle with colored sugar.
  5. Bake for 8-10 minutes until the edges are lightly golden. Cool on wire racks before decorating.

Notes

Chill the dough to maintain shape during baking. Avoid overmixing to keep cookies tender.
