Method
 

Preparation
  1. Begin by preheating your oven to 350°F (175°C) and lining baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and almond extract (if using) to the creamed mixture and combine well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Wrap the dough in plastic wrap and refrigerate for at least one hour.
Baking
  1. Dust a clean surface with flour, then roll the chilled dough out to about 1/4 inch thick.
  2. Use cookie cutters to create festive shapes and transfer the cut-outs to the prepared baking sheets.
  3. Bake in the preheated oven for 8-10 minutes, until the edges are lightly golden.
  4. Allow the cookies to cool on baking sheets for a few minutes before transferring them to a wire rack.
Frosting and Decorating
  1. In a mixing bowl, combine the powdered sugar, milk, and vanilla extract for frosting. Mix until smooth.
