Preparation
- Preheat your oven to 350°F (175°C) to ensure the bread bakes evenly.
- Grease a 9x5-inch loaf pan to prevent sticking.
- In a large bowl, combine the mashed bananas, softened cream cheese, sugar, brown sugar, melted butter, vanilla extract, and eggs. Mix until smooth and creamy.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon (if using) until uniform.
- Gradually add the dry ingredients to the banana mixture, stirring gently until just combined.
- Pour half of the batter into your prepared loaf pan. Dollop the remaining batter on top and swirl it with a knife.
Baking
- Place the loaf pan in the preheated oven and bake for 55-60 minutes until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For richer flavor, use flavored cream cheese or add walnuts or chocolate chips. Ensure bananas are ripe for optimal sweetness. This recipe can be easily doubled.
