Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone mats.
- In a large bowl, cream together the softened butter, cream cheese, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, and beat until combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Roll the dough into 1-inch balls and place them about 2 inches apart on your baking sheet. Flatten each ball gently.
Baking
- Bake for 8-10 minutes, or until the edges turn lightly golden.
- Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Icing
- In a bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Add green food coloring and mix until you achieve the desired shade.
- Once the cookies are completely cooled, spread the icing on top and sprinkle with green sugar sprinkles if desired.
Notes
For best results, ensure butter and cream cheese are softened. Do not overmix the dough. Chill formed dough balls for thicker cookies.
