- Begin by cooking the rotini pasta according to the package instructions. Once done, drain and set it aside.
- In a large bowl, toss the shrimp and diced chicken in Cajun seasoning until they are evenly coated.
Cooking
- In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken to the skillet and cook until browned and cooked through, about 6-7 minutes. Remove the chicken and set aside.
- In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant. Toss in the shrimp and cook until pink and opaque, about 3-4 minutes per side. Remove shrimp and set aside.
- Pour the heavy cream and milk into the skillet, stirring to combine. Bring to a gentle simmer, then lower heat. Mix in the Parmesan and cheddar cheeses, smoked paprika, red pepper flakes, and salt. Stir until the cheeses melt.
- Return the cooked chicken and shrimp to the skillet. Add the cooked pasta, tossing everything together until coated in the creamy sauce.
- Garnish with freshly chopped parsley before serving.
