Preparation
  1. Begin by cooking the rotini pasta according to the package instructions. Once done, drain and set it aside.
  2. In a large bowl, toss the shrimp and diced chicken in Cajun seasoning until they are evenly coated.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken to the skillet and cook until browned and cooked through, about 6-7 minutes. Remove the chicken and set aside.
  2. In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant. Toss in the shrimp and cook until pink and opaque, about 3-4 minutes per side. Remove shrimp and set aside.
  3. Pour the heavy cream and milk into the skillet, stirring to combine. Bring to a gentle simmer, then lower heat. Mix in the Parmesan and cheddar cheeses, smoked paprika, red pepper flakes, and salt. Stir until the cheeses melt.
  4. Return the cooked chicken and shrimp to the skillet. Add the cooked pasta, tossing everything together until coated in the creamy sauce.
  5. Garnish with freshly chopped parsley before serving.
