Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine cooked chicken, uncooked rice, chicken broth, cream of chicken soup, frozen mixed vegetables, cheddar cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix well.
- Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.
Baking
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the rice is tender and the casserole is bubbly and golden on top.
- Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
Notes
For enhanced flavor, swap the chicken for leftover rotisserie chicken or turkey. You can also add more vegetables like spinach or broccoli.
