Preparation
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and black pepper.
- Set up a dredging station: coat each piece of chicken in flour, dip into beaten eggs, then coat with the breadcrumbs and Parmesan cheese.
Cooking
- Heat olive oil in a skillet over medium heat. Cook the chicken for 4-5 minutes per side until golden brown and cooked through. Remove from skillet.
- In the same skillet, cook minced garlic for 1-2 minutes until fragrant. Pour in chicken broth and heavy cream, stirring to combine.
- Return the chicken to the skillet and top with grated mozzarella cheese. Cover and let cheese melt for 2-3 minutes.
- Sprinkle with chopped parsley before serving.
