Method
 

Preparing the Cod
  1. Heat oil in a deep frying pan or pot to 350°F (175°C).
  2. In a mixing bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.
  3. Gradually pour in the cold soda water while stirring to create a smooth batter.
  4. Dip the cod fillets into the batter, ensuring they are fully coated. Roll the coated fillets into the panko breadcrumbs.
  5. Carefully add the coated cod pieces to the hot oil and fry for about 4 minutes on each side until golden brown.
Assembling the Sandwich
  1. Place the fried cod fillets on the sandwich buns.
  2. Add a generous spoonful of tartar sauce, followed by fresh lettuce and juicy tomato slices.
  3. Close the sandwiches and serve.

Notes

For optimal crunch, consider double coating the cod, and ensure your oil temperature is correct. Store leftovers in an airtight container separately from the buns.
