  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 cup shredded parmesan cheese
  • 1 cup cooked pasta (optional)

Method
 

Preparation
  1. Add the chicken breasts, chicken broth, diced tomatoes, tomato sauce, Italian seasoning, salt, pepper, and minced garlic into the crock pot.
Cooking
  1. Set your crock pot to low for 6-7 hours, or on high for 3-4 hours.
  2. Ensure the chicken is tender and infused with all the flavors.
Finishing touches
  1. Shred the chicken right in the pot using two forks.
  2. Stir in the heavy cream and grated parmesan cheese.
  3. If using pasta, stir in the cooked noodles now.
  4. Ladle the soup into bowls and top with fresh basil.

Notes

Add spinach or kale in the last 30 minutes of cooking for added nutrition. Consider adding a pinch of red pepper flakes or lemon juice for extra flavor. For garnish, a sprinkle of parmesan or olive oil can enhance the presentation. For a lighter version, use low-fat cream or half and half.
