Preparation
  1. Brown the Meat: Start by heating a skillet over medium heat. Add the ground beef or turkey and cook until it’s no longer pink. Drain any excess fat.
  2. Combine Ingredients: In the crockpot, add the cooked meat, diced onion, minced garlic, black beans, kidney beans, corn, diced tomatoes (with juice), broth, taco seasoning, smoked paprika, bell pepper, and frozen mixed vegetables.
  3. Stir and Season: Stir to combine all ingredients evenly. Taste and adjust salt and pepper.
Cooking
  1. Cook: Cover the crockpot and cook on low for 6–8 hours or high for 3–4 hours until the vegetables are tender.
Serving
  1. Serve: Stir before serving hot. Garnish with cheese, sour cream, avocado, or cilantro.

Notes

For variations, consider adding jalapeños for spice or making it vegetarian with lentils and vegetable broth. Leftovers are even better the next day!
