Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, and baking powder.
- In a separate bowl, cream the butter and sugar until smooth and fluffy.
- Add the egg, vanilla and optional almond extracts, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Roll the dough into small balls and optionally coat in colored sugar.
- Place balls on the baking sheet, evenly spaced, and press down slightly with a fork.
- Bake for 8-10 minutes until edges are lightly golden and cool completely.
- Optionally, use a dove-shaped cookie cutter before baking or decorate with icing after cooling.
Notes
Chill dough for 30 minutes before rolling to maintain shape. Add a pinch of salt for enhanced flavor. Use gel food coloring for vibrant dough colors. For parties, double the batch and freeze for later.
