Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and baking powder.
  3. In a separate bowl, cream the butter and sugar until smooth and fluffy.
  4. Add the egg, vanilla and optional almond extracts, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Roll the dough into small balls and optionally coat in colored sugar.
  7. Place balls on the baking sheet, evenly spaced, and press down slightly with a fork.
  8. Bake for 8-10 minutes until edges are lightly golden and cool completely.
  9. Optionally, use a dove-shaped cookie cutter before baking or decorate with icing after cooling.

Notes

Chill dough for 30 minutes before rolling to maintain shape. Add a pinch of salt for enhanced flavor. Use gel food coloring for vibrant dough colors. For parties, double the batch and freeze for later.
