Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well-combined. Set aside.
  3. In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and 1 teaspoon of vanilla extract until fully incorporated.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the semi-sweet chocolate chips.
Cheesecake Filling
  1. In a separate bowl, beat together the softened cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract until smooth and creamy.
Forming Cookies
  1. Take a tablespoon of the cookie dough and flatten it, placing about 1 teaspoon of the cheesecake filling in the center. Top it with another tablespoon of cookie dough and seal the edges.

Baking
