Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well-combined. Set aside.
- In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and 1 teaspoon of vanilla extract until fully incorporated.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Fold in the semi-sweet chocolate chips.
Cheesecake Filling
- In a separate bowl, beat together the softened cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract until smooth and creamy.
Forming Cookies
- Take a tablespoon of the cookie dough and flatten it, placing about 1 teaspoon of the cheesecake filling in the center. Top it with another tablespoon of cookie dough and seal the edges.
- Place the cookie dough balls onto the prepared baking sheet, spaced about 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes until golden around the edges.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For best results, chill the dough for 30 minutes before baking. This helps prevent excessive spreading. Try using quality chocolate chips for better flavor. Experiment with mix-ins like nuts or different chocolate types.
