Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a muffin tin or tartlet pans.
  3. In a bowl, combine the graham cracker crumbs, sugar, melted butter, and powdered sugar. Stir until it resembles wet sand.
  4. Press the mixture firmly into the bottom and sides of your tartlet pans.
  5. Bake for 8-10 minutes until lightly golden.
  6. Allow the crusts to cool completely.
Filling and Assembly
  1. In a bowl, beat the softened cream cheese with the vanilla extract until smooth.
  2. Spoon the cream cheese mixture into each cooled tartlet shell.
  3. Heat the cherry jam in a small saucepan over low heat for 3-5 minutes until warmed.
  4. Spoon a layer of cherry jam over the cream cheese-filled tartlets.
  5. Add halved fresh cherries and sprinkle chopped pistachios on top.
  6. Refrigerate the tartlets for at least 1 hour to set.

Notes

Avoid overworking the graham cracker mixture to prevent density. Ensure cream cheese is softened for an ideal texture. Refrigerate before adding filling to maintain crust texture.
