Preparation
- Preheat the oven to 350°F (175°C).
- Lightly grease a muffin tin or tartlet pans.
- In a bowl, combine the graham cracker crumbs, sugar, melted butter, and powdered sugar. Stir until it resembles wet sand.
- Press the mixture firmly into the bottom and sides of your tartlet pans.
- Bake for 8-10 minutes until lightly golden.
- Allow the crusts to cool completely.
Filling and Assembly
- In a bowl, beat the softened cream cheese with the vanilla extract until smooth.
- Spoon the cream cheese mixture into each cooled tartlet shell.
- Heat the cherry jam in a small saucepan over low heat for 3-5 minutes until warmed.
- Spoon a layer of cherry jam over the cream cheese-filled tartlets.
- Add halved fresh cherries and sprinkle chopped pistachios on top.
- Refrigerate the tartlets for at least 1 hour to set.
Notes
Avoid overworking the graham cracker mixture to prevent density. Ensure cream cheese is softened for an ideal texture. Refrigerate before adding filling to maintain crust texture.
