Preparation
- Wash the cherry tomatoes and fresh herbs under cold running water and pat dry.
- Slice the cucumber into thick rounds.
- Cube the feta cheese into bite-sized pieces.
Assembly
- Take a small wooden skewer and thread it with a cherry tomato, cucumber slice, Kalamata olive, feta cube, and a fresh basil or mint leaf.
- Continue assembling until all ingredients are used, packing flavors into each skewer.
Dressing
- In a small bowl, whisk together olive oil, lemon juice, salt, and oregano to create the dressing.
Serve
- Drizzle the dressing over the assembled skewers or serve on the side for dipping.
- Enjoy the skewers chilled or at room temperature.
Notes
Optionally, add a variety of colored cherry tomatoes, include roasted bell peppers, or try different herbs. Store leftovers in an airtight container for up to two days.
