Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheets with parchment paper.
  3. In a large mixing bowl, cream together the softened butter and sugar until smooth and fluffy, about 2-3 minutes.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually sift in the flour and salt, mixing until a soft dough forms.
  6. Roll out the dough to about 1/4 inch thick and cut out floral shapes.
Baking
  1. Place the cookie shapes on the prepared baking sheets and bake for 8-10 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool completely on a wire rack.
Icing
  1. Whisk the egg white (or meringue powder) with lemon juice until soft peaks form.
  2. Gradually add powdered sugar while continuing to whisk until stiff peaks form.
  3. Divide the icing and add food coloring as desired.
  4. Once cookies are cool, decorate with royal icing.
  5. Allow the decorated cookies to sit until the icing sets.

Notes

Chill the cookie dough for 30 minutes before cutting shapes for extra crunch. Experiment with different flavored extracts and use edible glitters for decoration.
