Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla and almond extract (if using), along with salt, and blend to combine.
  4. Gradually add all-purpose flour, mixing in 1/4 cup at a time until the dough comes together.
  5. Roll out the dough on a lightly floured surface to about 1/4 inch thickness and cut out flower shapes.
  6. Transfer the cookies to the prepared baking sheet, spacing them out.
Baking
  1. Bake for 8-10 minutes or until the edges are slightly golden. Let them cool on a wire rack.
Making Royal Icing
  1. Whisk together the egg white (or meringue powder) and lemon juice until frothy.
  2. Gradually add powdered sugar and mix until smooth with stiff peaks.
