Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the egg and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the rainbow sprinkles.
Baking
  1. Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the baking sheets.
  2. Flatten each cookie ball slightly with the back of a spoon.
  3. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  4. Allow the cookies to cool completely on a wire rack.
Assembly
  1. Spread frosting on the bottom of one cookie and sandwich it with another cookie.
  2. Serve immediately, or store in an airtight container for up to 3 days.

Notes

Chill the dough for about 30 minutes for thicker cookies. Use different flavored frostings for variety.
