Preparation
- In a large skillet, melt 4 tablespoons of unsalted butter over medium heat.
- Add 4 minced garlic cloves to the melted butter and sauté for about 1 minute until golden and fragrant.
- Gently place the large shrimp into the skillet, sprinkle with 1 teaspoon paprika, and season with salt and pepper to taste.
- Cook the shrimp for 2-3 minutes on each side until they turn pink.
- Once cooked, promptly remove the shrimp from heat.
Prepare the Rice
- In a separate bowl, combine 2 cups of cooked jasmine rice with 1/4 cup fresh chopped cilantro, the juice of 1 lime, and the zest of 1 lime.
- Fluff and mix well using a fork.
Assembly
- To assemble, use a ring mold or small bowl to layer the cilantro lime rice first and then arrange the garlic butter shrimp on top.
- Carefully remove the mold and serve with lime wedges on the side.
Notes
For a heart-healthy twist, substitute unsalted butter with olive oil or avocado oil. Ensure shrimp are fresh to avoid rubbery texture.
