Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Grease a loaf pan or line it with parchment paper.
  3. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped onion, egg, milk, fresh parsley, salt, and pepper.
  4. Transfer the mixture to the prepared loaf pan, shaping it into a loaf.
  5. Drizzle olive oil over the top of the meatloaf.
Baking
  1. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  2. If using mozzarella, sprinkle it on top during the last 5 minutes of baking.
  3. Let the meatloaf rest for 10 minutes before slicing and serving.
  4. Garnish with fresh parsley.

Notes

Use a meat thermometer to ensure proper cooking. You can add finely chopped bell peppers or carrots for extra nutrition. Feel free to switch up the cheese or add seasonings to fit your taste preferences.
