Preparation
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium mixing bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
- In a stand mixer or large mixing bowl, beat the cold, cubed butter with light brown sugar and white granulated sugar until light and fluffy, about 3 to 4 minutes.
- Add the entire egg and egg yolk one at a time, beating well after each addition. If using, add the vanilla extract.
Mixing
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the milk chocolate chips until evenly distributed.
Baking
- Using a cookie scoop, drop large dough balls (approximately 2 tablespoons each) onto the prepared baking sheets, spacing them at least 3 inches apart.
- Bake in the preheated oven for 12-15 minutes until edges are golden brown and centers remain soft.
- Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
Use cold butter for thick cookies. Consider adding a pinch of sea salt on top before baking. For variation, try instant coffee or different types of chocolate chips.
