Giant Chocolate Chip Cookies

Ingredients
  

Dry Ingredients
  • 1 1/4 cups all-purpose flour
  • 3/4 cup cake flour
  • 1 tsp cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 1/2 cup cold unsalted butter, cubed Use cold butter for the best texture.
  • 1/2 cup light brown sugar, packed
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract (optional) Adds depth of flavor.
Chocolate Chips
  • 2 cups milk chocolate chips (or semi-sweet)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium mixing bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer or large mixing bowl, beat the cold, cubed butter with light brown sugar and white granulated sugar until light and fluffy, about 3 to 4 minutes.
  4. Add the entire egg and egg yolk one at a time, beating well after each addition. If using, add the vanilla extract.
Mixing
  1. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  2. Fold in the milk chocolate chips until evenly distributed.
Baking
  1. Using a cookie scoop, drop large dough balls (approximately 2 tablespoons each) onto the prepared baking sheets, spacing them at least 3 inches apart.
  2. Bake in the preheated oven for 12-15 minutes until edges are golden brown and centers remain soft.
  3. Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

Use cold butter for thick cookies. Consider adding a pinch of sea salt on top before baking. For variation, try instant coffee or different types of chocolate chips.
