Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and powdered sugar until smooth. Add the egg, vanilla extract, and almond extract (if using) to this mixture and beat until well incorporated.
  4. Gradually add the dry ingredients to the wet mixture, stirring until fully combined to form soft dough.
  5. On a floured surface, roll out the dough to about 1/4 inch thickness. Use a cookie cutter to cut out the cookies and place them on the prepared baking sheet.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool completely on a wire rack before decorating.
Decoration
  1. Decorate the cookies using green sugar or piping green icing in holly leaf shapes, adding red candy or M&M’s for holly berries, and finish off with gold sprinkles or edible gold dust.

Notes

Ensure your butter is softened to room temperature for a creamy consistency. Use a gentle hand when rolling out the dough to maintain softness. Experiment with different icing techniques for variety. Store cookies in an airtight container for up to a week or freeze for up to three months.
