Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt until combined.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms. Avoid overmixing.
- Take about 1 tablespoon of dough, roll it into a ball, flatten it slightly, and place a piece of dark chocolate in the center.
- Fold the dough around the chocolate and roll back into a ball. Place cookie dough balls on the prepared baking sheet, spacing them 2 inches apart.
Baking
- Bake for 8-10 minutes, or until edges are set and the center is slightly soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Use high-quality dark chocolate for the best gooey center. Experiment with different types of chocolate or add a pinch of espresso powder for enhanced flavor.
