Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt until combined.
  3. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms. Avoid overmixing.
  6. Take about 1 tablespoon of dough, roll it into a ball, flatten it slightly, and place a piece of dark chocolate in the center.
  7. Fold the dough around the chocolate and roll back into a ball. Place cookie dough balls on the prepared baking sheet, spacing them 2 inches apart.
Baking
  1. Bake for 8-10 minutes, or until edges are set and the center is slightly soft.
  2. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes
