Preparation of the Filling
- In a medium bowl, beat together the softened unsalted butter, creamy peanut butter, powdered sugar, heavy cream, and vanilla extract until smooth.
- Scoop out about 1 tablespoon of this mixture, roll it into small balls, and freeze for at least 30 minutes.
Preparation of the Cupcake Batter
- Prepare your favorite cupcake batter according to the package instructions.
Assembly
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Spoon a small amount of cupcake batter into each liner.
- Place a frozen peanut butter ball into the center of each liner, and cover with more batter.
Baking
- Bake the cupcakes for about 18-20 minutes, until a toothpick comes out clean except for the gooey peanut butter.
