Method
 

Preparation
  1. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts generously with salt, pepper, and dried oregano.
  2. Carefully place the chicken in the skillet. Sauté for about 6-7 minutes on each side until they turn golden brown and are cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, reduce the heat slightly and add the minced garlic. Sauté for about one minute until fragrant.
  4. Add the chopped spinach to the skillet and cook until the spinach is completely wilted—about 2-3 minutes.
  5. Pour in the heavy cream and bring it to a gentle simmer.
  6. Stir in the crumbled feta cheese and lemon juice, mixing until the sauce becomes rich and creamy. Taste and adjust seasoning if needed.
  7. Return the cooked chicken to the skillet and allow it to soak up the sauce for another 2-3 minutes.
  8. Garnish with fresh parsley and serve immediately.

Notes

Serve over rice or alongside mashed potatoes to soak up the sauce. For a lighter option, pair with a Greek salad.
