- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts generously with salt, pepper, and dried oregano.
- Carefully place the chicken in the skillet. Sauté for about 6-7 minutes on each side until they turn golden brown and are cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat slightly and add the minced garlic. Sauté for about one minute until fragrant.
- Add the chopped spinach to the skillet and cook until the spinach is completely wilted—about 2-3 minutes.
- Pour in the heavy cream and bring it to a gentle simmer.
- Stir in the crumbled feta cheese and lemon juice, mixing until the sauce becomes rich and creamy. Taste and adjust seasoning if needed.
- Return the cooked chicken to the skillet and allow it to soak up the sauce for another 2-3 minutes.
- Garnish with fresh parsley and serve immediately.
Notes
Serve over rice or alongside mashed potatoes to soak up the sauce. For a lighter option, pair with a Greek salad.
