  • 0.5 cup granulated sugar Sweetens the berry mixture.
  • 2 tablespoons cornstarch Thickens the filling for a perfect consistency.
  • 1 tablespoon lemon juice Adds brightness and balances the sweetness.
  • 0.5 teaspoon vanilla extract Enhances the overall flavor profile.
  • 1 egg beaten, for egg wash Gives the crust a beautiful golden finish.
  • 1 tablespoon granulated sugar (optional, for sprinkling) Adds a sweet crunch to the top.

Method
 

Preparation of the Pie Crust
  1. In a large mixing bowl, combine the flour, salt, and sugar.
  2. Add the cold, cubed butter and mix until the texture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, until the dough begins to come together.
  4. Knead the dough gently, divide into two balls, flatten into discs, wrap in plastic, and chill in the refrigerator for at least 1 hour.
Preheat the Oven
  1. Set your oven to 375°F (190°C).
  2. On a floured surface, roll out one disc of dough into a circle that’s slightly larger than your pie pan.
  3. Use a heart-shaped cookie cutter to cut the shape or simply press it into the pan, trimming any excess.
Preparation of the Berry Filling
  1. In a large bowl, mix together your chosen berries, granulated sugar, cornstarch, lemon juice, and vanilla extract until well combined.
  2. Pour this delicious mixture into your prepared crust.
Topping the Pie
  1. Roll out the second disc of dough and cut it into strips or your desired shapes.
  2. Arrange these over the berry filling for a beautiful lattice or an artistic design.
  3. Brush the top with the beaten egg wash and sprinkle with sugar if you desire an extra crunch.
Baking
  1. Place your pie in the preheated oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  2. Once done, let it cool for at least 30 minutes before serving to allow the filling to set.

Notes

To elevate your Heart-Shaped Berry Pie, consider adding a dash of cinnamon to the berry filling. If you’re in a hurry, store-bought pie crust can save time. Adjust the sugar in the berry filling based on your preference. You can also decorate the top with mini berry hearts using leftover dough!
