Method
Preparation of the Pie Crust

- Knead the dough gently, divide into two balls, flatten into discs, wrap in plastic, and chill in the refrigerator for at least 1 hour.
Preheat the Oven
- Set your oven to 375°F (190°C).
- On a floured surface, roll out one disc of dough into a circle that’s slightly larger than your pie pan.
- Use a heart-shaped cookie cutter to cut the shape or simply press it into the pan, trimming any excess.
Preparation of the Berry Filling
- In a large bowl, mix together your chosen berries, granulated sugar, cornstarch, lemon juice, and vanilla extract until well combined.
- Pour this delicious mixture into your prepared crust.
Topping the Pie
- Roll out the second disc of dough and cut it into strips or your desired shapes.
- Arrange these over the berry filling for a beautiful lattice or an artistic design.
- Brush the top with the beaten egg wash and sprinkle with sugar if you desire an extra crunch.
Baking
- Place your pie in the preheated oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
- Once done, let it cool for at least 30 minutes before serving to allow the filling to set.
Notes
To elevate your Heart-Shaped Berry Pie, consider adding a dash of cinnamon to the berry filling. If you’re in a hurry, store-bought pie crust can save time. Adjust the sugar in the berry filling based on your preference. You can also decorate the top with mini berry hearts using leftover dough!
