- Melt the white chocolate chips in a microwave-safe bowl at 20-second intervals, stirring well after each until fully melted. Set aside to cool slightly.
- In a separate bowl, whip the heavy cream with a hand mixer until stiff peaks form.
- In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
- Gently combine the melted white chocolate with the mascarpone mixture, folding in the whipped cream carefully.
Assembly
- If using, sprinkle graham cracker crumbs at the bottom of each serving glass.
- Spoon the mousse into each glass, alternating layers with fresh raspberries.
- Top off each glass with a final layer of mousse and garnish with fresh raspberries and mint leaves.
Chill
- Refrigerate the parfaits for at least two hours to allow the flavors to meld beautifully.
Notes
For a healthier version, consider substituting Greek yogurt for mascarpone cheese. Coconut cream can be used for a dairy-free option.
