For the Mousse
  • 1 cup fresh raspberries For layering in the parfait.
  • 1 cup white chocolate chips Melted to create the mousse.
  • 1 cup heavy cream Must be cold before whipping.
  • 1/2 cup mascarpone cheese, softened Provides a smooth, velvety texture.
  • 2 tbsp powdered sugar Adjust based on sweetness preference.
  • 1 tsp vanilla extract Adds flavor to the mousse.
Optional Garnish
  • 1/2 cup graham cracker crumbs For added texture at the bottom layers.
  • Fresh raspberries For topping the parfait.
  • Mint leaves For garnishing.

Method
 

Preparation
  1. Melt the white chocolate chips in a microwave-safe bowl at 20-second intervals, stirring well after each until fully melted. Set aside to cool slightly.
  2. In a separate bowl, whip the heavy cream with a hand mixer until stiff peaks form.
  3. In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
  4. Gently combine the melted white chocolate with the mascarpone mixture, folding in the whipped cream carefully.
Assembly
  1. If using, sprinkle graham cracker crumbs at the bottom of each serving glass.
  2. Spoon the mousse into each glass, alternating layers with fresh raspberries.
  3. Top off each glass with a final layer of mousse and garnish with fresh raspberries and mint leaves.
Chill
  1. Refrigerate the parfaits for at least two hours to allow the flavors to meld beautifully.

Notes

For a healthier version, consider substituting Greek yogurt for mascarpone cheese. Coconut cream can be used for a dairy-free option.
