Preparation
- Preheat your oven to 400°F (200°C) to prepare for roasting the lamb chops.
- In a bowl, mix together the rosemary, thyme, Dijon mustard, minced garlic, salt, and pepper to make the marinade.
- Rub the marinade generously over the lamb chops, ensuring they are evenly coated. Allow them to sit for a few minutes.
Cooking
- In a skillet over medium-high heat, heat the olive oil. Once hot, add the lamb chops and sear for about 2-3 minutes on each side until golden brown.
- Transfer the seared lamb chops to a baking dish and roast in the preheated oven for 10-12 minutes for medium-rare doneness.
- While the lamb is roasting, place the cubed potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Add in the milk, butter, minced garlic, salt, and pepper. Mash until creamy and smooth.
- Plate the herb-crusted lamb chops alongside a generous serving of garlic mashed potatoes.
Notes
Allow the lamb chops to rest for a few minutes before slicing. Customize the herbs to experiment with unique flavor profiles. Add more minced garlic if desired for richness. Consider adding cream cheese or sour cream for an ultra-creamy texture in the mashed potatoes.
