Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk these dry ingredients together.
- In a separate bowl, cream together the softened butter and sugar until light and fluffy.
- Add in the eggs, vanilla extract, and sour cream, mixing well until thoroughly combined.
- Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
- Fold in the finely chopped peaches.
- Fill each muffin cup about two-thirds full with the batter.
Baking
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and allow to cool completely in the pan.
Frosting
- Using a mixer, beat together the cream cheese and softened butter until smooth and creamy.
- Gradually add the powdered sugar, honey, and vanilla extract, beating until fluffy.
- Once the cupcakes have cooled completely, frost each one generously with the cream cheese frosting.
Notes
Don't over-mix the batter once you combine the wet and dry ingredients. Refrigerate your frosting for easier handling. Add drizzles of honey or sprinkle nuts on top for extra flavor.
