Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk these dry ingredients together.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add in the eggs, vanilla extract, and sour cream, mixing well until thoroughly combined.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Fold in the finely chopped peaches.
  7. Fill each muffin cup about two-thirds full with the batter.
Baking
  1. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
  2. Remove from the oven and allow to cool completely in the pan.
Frosting
  1. Using a mixer, beat together the cream cheese and softened butter until smooth and creamy.
  2. Gradually add the powdered sugar, honey, and vanilla extract, beating until fluffy.
  3. Once the cupcakes have cooled completely, frost each one generously with the cream cheese frosting.

Notes

Don't over-mix the batter once you combine the wet and dry ingredients. Refrigerate your frosting for easier handling. Add drizzles of honey or sprinkle nuts on top for extra flavor.
