Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin or prepare silicone muffin cups.
Making the Cookie Dough
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, blending well.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Take about 1.5 tablespoons of cookie dough and press it into the bottom and up the sides of each muffin cup.
Baking the Cookie Cups
- Bake the cookie cups in the preheated oven for 10-12 minutes until lightly golden.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
Making the Lemon Filling
- In a separate bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and flour until smooth.
Final Baking
- Once the cookie cups are cooled, carefully pour the lemon filling into each cup, filling about 3/4 full.
- Return to the oven and bake for an additional 15-18 minutes or until the filling is set.
Serving
- Allow to cool completely before dusting with powdered sugar if desired.
- Serve chilled or at room temperature.

For better flavor, use fresh lemon juice. Consider healthier alternatives like coconut oil or whole wheat flour.
