Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a loaf pan, or line it with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Mixing the Batter
  1. In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  2. Add the eggs one at a time, beating well after each addition.
  3. Stir in the lemon juice, lemon zest, and vanilla extract.
  4. Gradually add the flour mixture to the wet ingredients, alternating with the yogurt. Mix until just combined.
Adding Blueberries
  1. Toss the fresh blueberries in the tablespoon of flour.
  2. Gently fold the blueberries into the batter.
Baking
  1. Pour the batter into the prepared loaf pan and smooth it out.
  2. Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  3. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a healthier version, substitute half of the all-purpose flour with whole wheat flour. You can also reduce the sugar or substitute it with honey or maple syrup. Adding chopped nuts or different fruits can create unique variations.
