Preparation
- Preheat your oven to 350°F (175°C).
- Grease and flour a loaf pan, or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Mixing the Batter
- In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition.
- Stir in the lemon juice, lemon zest, and vanilla extract.
- Gradually add the flour mixture to the wet ingredients, alternating with the yogurt. Mix until just combined.
Adding Blueberries
- Toss the fresh blueberries in the tablespoon of flour.
- Gently fold the blueberries into the batter.
Baking
- Pour the batter into the prepared loaf pan and smooth it out.
- Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a healthier version, substitute half of the all-purpose flour with whole wheat flour. You can also reduce the sugar or substitute it with honey or maple syrup. Adding chopped nuts or different fruits can create unique variations.
